Cream of Mushroom soup recipe!

1.5kg    Shitake

1.5kg    Button mushrooms

500g     sliced white onion

70g      minced garlic

20g      Fresh thyme

500g     Sherry

2 liter    Cream

5 liter    veg stock

 

(1)     Roast shitake mushrooms at 180oC for 30 minutes


(2)     In a pan sweat onion, garlic and thyme until golden brown


(3)     Add button mushrooms and cook until all water has reduced and they are golden brown


(4)     Add sherry and reduce by half


(5)     Add shitake, cream, veg stock and simmer for 1 hour


(6)     Blend smooth and season to taste


(7)     When serving finish with fresh tarragon
