As a chef I feel it my moral duty to source ingredients responsibly, over fishing and or irresponsible fishing has depleted the worlds oceans massively.

It is our responsibility to act to ensure the survival of the many threatened species and ecosystems.

In the restaurant we try our best always to understand our produce, the effect it has on the species and the environment, Mackerel is an abundant fish in many places around the world, that as well as the fact it is delicious and jam packed with omega 3 is the reason we created this Cured Mackerel, cucumber and quinoa dish.
